Culinary Fundamentals
* Braising, stewing, sauté, deep and shallow frying,  steaming, roasting, grilling, and broiling
* Vegetable and starch cookery
* Soups, purees, creams, broths, consommé, chowder

Pastry
* Baking theory, history, and science
* Hands-on technique and fundamentals of breads, pastries, cakes, tarts, ice cream, plated desserts, sauces, chocolate,
candy, and cake decorating

Mission Statement
For students to have a unique opportunity to learn and develop skills necessary for success in a
chosen career and also to prepare for post secondary education. This program will provide an
integrated approach where students learn apply both academic, technical and life skills through
a combination of school and work-based experiences. To also learn from each other while
having fun and also to always approach everything with commitment.

What You Can Learn
Jacobson Culinary Arts Academy is a four year program located at Tarpon High School in Tarpon
Springs, Florida. Students work alongside professional chef instructors in kitchens with equipment
commonly found in industry. JCAA strives to give the students real life skills by catering local
events and entering challenging competitions.
